Corn Bread Pudding Casserole

Pairs with J. Rickards Zinfandel and BBQ

2 eggs, beaten
1 can whole kernel corn, drained
1 can creamed corn
1 box Jiffy corn muffin mix
1 stick butter, melted (or 1/2 c. vegetable oil)
1 c. sour cream
Shredded sharp cheddar cheese, about 1 cup

Preheat to 350°F. Mix all ingredients except cheese. Pour into a casserole dish or 9”x13” baking dish. Sprinkle shredded cheese on top. Bake on middle rack of the oven for 45 to 50 minutes or until fully cooked in center.

Very simple, very rich!  Serves 6-8
